Our little shop has been exceptionally busy catering these days. Part of our success is definitely our scratch baking. One of the favorites is the brownie – it’s so versatile. We feature flavours such as mint, peanut butter, salted caramel, black forest … the possibilities are endless.
Baking can evoke a memory of a person or happy time in our lives, just like the smell of turkey or chicken noodle soup. Locked deep in our minds, these smells and flavours take us to a special time and moment like no other.
Finding that comfort and memory, can be a challenge, if your diet and lifestyle needs have changed. We look for healthy alternatives or decide to be vegan or gluten-free, and our quest for good food is even more of a challenge, especially when you are busy and don’t have time to cook or bake for yourself.
There can also be issues if your guests requires special needs – try to plan something for them, and if you need advice ask what they have sensitivities to and plan to avoid those ingredients.
It can be a challenge, but it’s important – don’t give up. There are lots of shops trying to provide for people’s ever-changing needs. Keep it local as you shop for your entertainment needs.
Fudgy Cherry Almond Wheat-free Brownies
- 6 oz semi sweet chocolate
- 1/4 cup butter
- 1/4 cup apple sauce
- 2 tsp. vanilla
- 4 egg whites at room temperature
- 2/3 cup granulated sugar
- 1 cup ground almonds
- 1 tsp. cinnamon
- 1/2 cup dried cherries
- Preheat oven at 325 F.
Combine chopped chocolate and butter and melt in a double boiler or melt in a microwave and stir together. Stir in apple sauce and vanilla. Set aside to cool.
In a mixing bowl add room temperature eggs and beat until frothy, then gradually add the sugar. Beat on high until stiff peaks form, about 4 minutes. Gradually fold in almonds, cinnamon and dried cherries. Don’t over mix!
Line an 8×8 pan with spray and parchment paper. Pour batter in and bake in center of the oven for approximately 25-30 minutes.
Allow to cool and cut into squares, dust with icing sugar if desired.
