Ever wonder what the LOFT box program is about? Every week we have boxes full of local organic produce delivered to our store for local families and for our team to prepare.
Inside the reusable boxes are seasonal items ready to prepare – fresh produce of the week, and many recipes to try. This week we received zucchini, cabbage, transparent apples, fresh greens, onions, tomatoes, garlic and rainbow carrots. You can order other items online as well to add to the box.
Part of the fun receiving the LOFT box is working with new ingredients or varieties. The food is fresh and tasty. Easy Apple Cake
- 1 egg
- 1 cup sugar
- 1/4 cup vegetable oil
- 2 cups grated apple
- 1 cup all-purpose flour
- 1tsp. cinnamon
- 1tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1/2 cup chopped walnuts
- 1 tsp. vanilla
Beat egg with sugar and add oil as well as grated apple, then add dry ingredients.
Bake at 350 F in an 8-inch square pan, buttered and floured for approximately 25-30 minutes.
Allow to cool and prepare icing.
- 1/2 cup softened butter
- 1 cup brown sugar
- 1/2 cup 35% cream
Put all ingredients in a pot, boil for 2 minutes. Cool then beat until fluffy. Spread on the cake and serve.
