A tasty, if nontraditional combination

Arugula Watermelon Feta Salad

There is a lot of activity at the St. Jacobs Farmers Market, especially at this time of year. The produce is plentiful and beautiful – walking through the market, mouthwatering salads come to mind.

To combat the heat, watermelon feta salad is a delicious, must-try recipe. It’s so simple, and so tasty. Favourite recipes are ones with shining stars that complement each other.

The peppery arugula, matches the sweetness of the watermelon and the feta provides the creaminess and salt.

Try this simple recipe on the next steamy day or after your next trip to the farmers’ market (don’t forget to come and see us in the tent). Refresh your palette as well as stepping out of your comfort zone!

Arugula Watermelon Feta Salad

1 bunch of arugula

1 cup diced watermelon 1×1”

1/4 cup diced feta

1 lemon juices

2 Tbsp. olive oil

6 leaves mint, chopped

Sprinkle of cracked pepper

Wash arugula thoroughly and spin dry.

Place arugula in a bowl, then add watermelon, feta, lemon juice, olive oil, pepper and mint.

Toss all ingredients lightly and serve.
