Hemp hearts are an amazing source of protein, filled with Omega 3 & 6 and also include a good amount of fibre. These little gems can be sprinkled on anything. I like to add them to salads, sprinkle on my toast with nut butter and fruit spread, add to a morning smoothie (or to our choco-peanut butter smoothie at the café) … the list goes on.
However, I am absolutely loving these Hemp & Oat bars. They are perfect for people and families on the go: delicious and nutritious. Give ‘em a try – I bet you’ll love ‘em too.
Hemp & Oat Bars
1-1/2 cups rolled oats, toasted
2 tbsp coconut oil (for toasting oats)
1 cup natural peanut butter
1 cup hemp seeds
1/3 cup maple syrup
1 tsp cinnamon
Pinch of salt
1/4 cup chopped dark chocolate or cacoa nibs
1/4 cup chopped dried cherries
Heat a large skillet to medium-high heat, add coconut oil and allow to melt;
Add oats and toast until the oats turn golden brown in colour. Remove from heat and transfer to a bowl, allow to cool;
While the oats are cooling, mix the other ingredients together in a bowl;
Add the oats and mix well;
Press the mixture into a wax paper- or saran-lined 8×8 baking dish and refrigerate for at least 3 hours, preferably overnight. Make sure you spend some time really pressing it down into the pan;
Once it’s set, lift from pan and cut into 8 squares. Store in a container in the fridge.
