We are a social minded society. We Tweet, Facebook, Link ourselves in and bring thoughts to social media every day. Some much more than others. Whether it be a mindless hobby or business networking, social media has been an experience enjoyed or for some, a source of great stress for others. Unfortunately, as we become more technologically advanced, our face-to-face time is limited. Long before we had social media there were community events called “socials,” a means of celebrating a time of year, the harvest or just an excuse to mingle off of the front porch. It was an event with tasty treats and beverages for all ages to enjoy. You will still see “strawberry social” signs in small communities that haven’t lost sight of the importance of being together and knowing your neighbours. In catering we travel in many communities, this past weekend it was Heidelberg and Elora. I smiled when I saw the sign and was happy we were already celebrating local berries that night for a wedding. One hundred handmade shortcakes with berries and whipped cream, lined up the kitchen and ready to be enjoyed. This was a memorable dessert for a very special couple. Enjoy your social network which is your community, neighbours, family and friends. In times of need, they are the ones who will be there to encourage, support and guide you. A reminder that the phone or computer does not take the place of the relationships built over time.
Ingredients
- Strawberry Shortcake
- 2 cups flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 3 tbsp sugar
- 6 tbsp butter
- 3/4 cup whipping cream
- -Garnish for cakes-
- Strawberry jam
- 1 cup whipped cream
- 1 tbsp vanilla
- 1tbsp sugar
- Pint of berries
Instructions
- Sift together flour, baking powder and salt together;
- Add sugar and butter to the dry ingredients to resemble crumbs;
- Add whipping cream and bring together to resemble a biscuit dough;
- Use a 3-oz scoop or ice cream scooper to put dough on a parchment-lined baking sheet. Brush lightly with whipping cream and sprinkle sugar on top of each biscuit;
- Bake in oven at 350F until golden brown and baked through;
- Once cooled, slice the biscuit in half and add spread on some strawberry jam. Add as much whipped cream and fresh berries as you like. Enjoy!
